STIR FRY FISH

Steps:
Prepare the fish
- Cut into bite-sized pieces. Season with salt and pepper.
- In a large pan 1 tablespoon of vegetable oil over medium-high heat.
- Add the fish pieces to the pan and cook for 2-3 minutes per side, until cooked through. Remove from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the sliced onion and cook for 2-3 minutes, until softened. Add the minced garlic and cook for 1 minute, until fragrant.
- Add the carrots to the pan and cook for 2-3 minutes, until they start to soften.
- Add the sliced bell pepper to the pan and cook for an additional 2 minutes, until all vegetables are tender-crisp.
- Return fish: Add the cooked fish back into the in pan and stir to combine with the vegetables..
