FISH MANGO SALSA

A vibrant, tropical dish featuring grilled or pan-seared fish topped with a fresh mango salsa made from diced mangoes, onions, cilantro, lime juice, and sometimes chili for a hint of spice

Steps:

Preparing the Fish:

  1. Season: Season the fish fillets with salt, pepper, and paprika.
  2. Heat oil: Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the fish: Cook the fish fillets for 3-4 minutes per side, or until cooked through.

Preparing the Mango Salsa:

  1. Combine: Combine the mango, red onion, jalapeño pepper, and cilantro in a bowl.
  2. Squeeze lime juice: Squeeze the lime juice over the mango mixture and toss to coat.
  3. Season: Season the salsa with salt and pepper to taste.

Serving:

  1. Serve: Serve the cooked fish with the mango salsa spooned over the top.
  2. Garnish: Garnish with additional cilantro, if desired.

Ingredients:

For the Fish:

  • (170g) white fish fillets such as tilapia
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 2 tablespoons of olive oil

For the Mango Salsa:

  • 2 ripe mangos, diced
  • 1/2 cup red onion, diced
  • 1 red ball pepper finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons of lime juice
  • Salt and pepper to taste
  • 1tablespoon of olive oil
