OVEN POACHED FISH IN WHITE HERB SAUCE

Tender fish, creamy herb-infused sauce, delicate flavors, oven-poached

Preparing the Fish:

  1. Preheat oven: Preheat your oven to 400°F (200°C).
  2. Season the fish: Season the fish fillets with salt, pepper, and minced garlic.
  3. Add butter : Place a tablespoon of softened butter on top of each fish fillet, place on the baking plate.
  4. Bake for 10-12 minutes or until the fish is cooked thoroughly.

Making the White Herb Sauce:

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the flour and whisk to combine. Cook for 1-2 minutes, until the mixture is lightly golden.
  3. Add stock and cream or milk: Whisk in the fish stock and heavy cream and bring the mixture to a simmer.
  4. Reduce and season: Reduce the heat to low and simmer the sauce for 2-3 minutes, until it thickens slightly. Season with salt, pepper, and chopped parsley and dill.

Serving:

  1. Place an oven-poached fish fillet on each plate.
  2. Spoon the white herb sauce over the fish.
  3. Garnish: Garnish with additional parsley and dill

  • (170g) fish fillets-
  • 2 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • salt & pepper to taste

**For the white herb sauce****

  • 2 tablespoons unsalted butter-
  • 2 tablespoons all-purpose flour-
  • 1 cup fish stock – 1/2 cup heavy cream-
  • 2 tablespoons chopped fresh parsley-
  • 2 tablespoons chopped fresh dill-
  • Salt & pepper, to taste
