OVEN POACHED FISH IN WHITE HERB SAUCE
Tender fish, creamy herb-infused sauce, delicate flavors, oven-poached
Preparing the Fish:
- Preheat oven: Preheat your oven to 400°F (200°C).
- Season the fish: Season the fish fillets with salt, pepper, and minced garlic.
- Add butter : Place a tablespoon of softened butter on top of each fish fillet, place on the baking plate.
- Bake for 10-12 minutes or until the fish is cooked thoroughly.
Making the White Herb Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Add the flour and whisk to combine. Cook for 1-2 minutes, until the mixture is lightly golden.
- Add stock and cream or milk: Whisk in the fish stock and heavy cream and bring the mixture to a simmer.
- Reduce and season: Reduce the heat to low and simmer the sauce for 2-3 minutes, until it thickens slightly. Season with salt, pepper, and chopped parsley and dill.
Serving:
- Place an oven-poached fish fillet on each plate.
- Spoon the white herb sauce over the fish.
- Garnish: Garnish with additional parsley and dill
