Our fish is put in the fridge to subject it to lower temperatures to meet the quality and shelf-life goals as well as to retain its freshness through minimizing dripping. Adding ice exerts additional temperature influence to retain our Fish quality, freshness, and taste after any desired preparation without freezing it. Where do you take the fish that has overstayed? Do you put it back to the market or dump it?
We have an effective inventory control system in place where we dispose of aged Fish. Our Quality, Health, safety, and Environment teams follow set protocols for environmentally safe disposal of aged fish, and we ensure nothing of that batch goes back to the market.
